
Make a delicious loaf of Whole Wheat Bread!
Here's the recipe:
Whole Wheat Bread
Using my Bosch Mixer, I can make 5 large loaves of bread
In less than 30 minutes of my time! (not counting cooking time)
Mix in a Bosch Mixer (or by hand)
8 - 9 c. fresh whole wheat flour
6 c. warm water
Mix to a paste consistency
In this order add to the paste mixture:
2 1/2 Tbsp. SAF Instant Yeast
2 Tbsp. Real Salt (I use Gourmet Sea Salt)
2/3 c. Honey - I use dried honey. It's quick with no mess (I buy it in #10 cans at Macey’s)
1/2 c. Oil (I use canola oil)
2 Tbsp. Vital Wheat Gluten
Mix together well
Start adding approx. 4 more cups of whole-wheat flour
Enough to make the dough pull away from the sides of the bowl
Be careful not to add too much flour
Knead on the highest speed for 7 - 8 min.
OR vigorously by hand for 7 - 8 min.
Since the Bosch Mixer is doing the work for me,
I take that time to get my kitchen cleaned up.
After the 7 - 8 min., add 2 1/2 tbsp. Dough Enhancer
Mix for 2 more minutes
While it’s mixing, put shortening on your hands.
When dough is done mixing, place dough in quality, non-stick bread pans.
Let loaves rise until doubled (about 60 min.)
Place bread loaves in a COLD oven
Turn oven on 350 degrees
Set timer for 35 - 40 min. as soon as you put them in the oven.
40 min. later, take bread out of oven and place on cooling rack
Hot, fresh, whole wheat bread w/ butter and honey is TO DIE FOR!
NOTE: Once the dough is made and ready to put in bread pans, you can make Cinnamon Rolls instead of bread loaves if you like.
Other uses for the bread dough: Cinnamon Rolls, Hamburger Rolls, Turkey/Cheese Rolls, Pizza Dough, etc.
