Tip #4 Sweet and Sour Chicken - A delicious meal that freezes well!


Sweet and Sour Chicken

4-5 boneless, skinless chicken breasts
1 small onion, chopped
1/2 cup soy sauce
2/3 cup white sugar
1 green bell pepper, chopped
2-3 carrots, sliced
1 (15 oz.) can pineapple chunks
1/2 cup vinegar
1/2 cup ketchup
1 TBSP cornstarch

Cut up chicken into pieces and brown in onion and soy sauce. Add vinegar, sugar, and the juice from the pineapple chunks (save chunks for later). Add vegetables. Stir in ketchup. Mix cornstarch with 1/4 cup cold water. Add mixture and stir until thick; add pineapple. Cool and place in SANDWICH SIZE FREEZER BAGS and freeze.

To serve: IN THE MORNING, Take frozen meal out of the bag, place in a slow cooker (crockpot), cook on LOW, cook 3 - 6 hours, depending on the size of meal. Serve w/ rice.

OR and put the frozen bag in the refrigerator the night before and let it thaw out safely.
Heat over stove until bubbly.
Serve over rice.
