
MONEY SAVING TIP: Store these healthy cookies in Zip Lock Sandwich Bags – ready to go at a moment’s notice. This recipe makes a large batch so you can freeze them if you like. Get in the habit of ALWAYS having some healthy food like this with you whereever you go. It will help you avoid spending any money in vending machines, fast food restaurants or convenience stores!
2 cups butter
3 1/2 cups sugar
1 or 2 TBSP molasses
4 eggs
4 TBSP hot water
2 tsp vanilla (I like the Mexican Vanilla)
1 tsp salt (I use Gourmet sea salt)
2 tsp baking soda
2 TBSP Kitchen Specialties Dough Enhancer (Enhances the whole wheat flour)
5 cups whole wheat flour (I use freshly ground but use whatever you like)
6 - 10 cups baby oats OR six-grain rolled mix
OPTIONAL: 1 12 oz. pkg. semi-sweet chocolate chips
If you want some variety, add a handful of walnuts, dates, coconut, raisins, craisins, butterscotch chips, broken pretzels, peanut butter chips, ½ c peanut butter, etc.
Combine and blend butter, sugar, molasses, eggs, hot water, and vanilla together in one bowl.
In a separate bowl mix all the dry ingredients together: salt, soda, dough enhancer and flour.
In a separate bowl mix all the wet ingredients together: butter/sugar mixture
Mix wet ingredients with dry ingredients.
Add oats, 7 grain rolled mix OR any other ingredients like chocolate chips, etc.
Blend again.
TIME SAVING TIP: Spread ALL of the dough evenly onto TWO or THREE cookie sheets.
Preheat oven and bake at 350 degrees for approx. 15 minutes or until golden brown.
Cut into bars when cooled.
